Leek, Pea and Watercress Soup

Ingredients
2 leeks, slices2 garlic cloves (or however many you fancy)Root ginger (about a 1 inch piece, grated)350g frozen peas100g watercress600ml vegetable stockcouple handfuls of spinach
Directions
Serves 4

Sweat the leeks in a little bit of oil for a couple of minutes, then add the garlic and ginger.
Add the peas and stock, simmer for 3 minutes or so then add the watercress and simmer for another couple of minutes, simple! I chucked in some spinach as it needed using up, and some cannelini beans just for texture and creamyness.
