Southwestern Turkey Stew

Ingredients
1 Package Ground Turkey (Foster Farms 20oz)4 Cups Diced Canned Tomatoes2 Cups Peppers (Red, Green, and/or Yellow)1 Cup Corn (Frozen or Canned)1 Cup Red Kidney Beans1 Medium Onion Diced6 Medium Red Potatoes1 Garlic Clove MincedOptional Toppings:Kraft Lowfat Shredded Mexican CheeseLight/Fat Free Sour Cream
Directions
1. Brown ground turkey (season at your discretion; taco/chili season is suggested)
2. Cut Red Potatoes into cubes, dice onions, slice peppers, mince garlic.
3. Combine/stir in ALL of the ingredients into crockpot and let cook for 8 HOURS on low or until desired taste.
4. When ready, finish off with the optional toppings of cheese and sour cream (not added into the nutrional value of the stew).

Feel free to modify with your own spices or add/subtract ingredients.

Makes about 12 servings/cups.

    Pretty good, except I should have added some more spices. (chili powder? cumin? ) I also added a tiny bit of wheat angel hair at the end to thicken it up a bit. I just wish I could have found low-salt alternatives, because the sodium level was probably off the charts. - 10/22/08

    it sounded great, but i changed it a little. i used chicken breast instead of ground turkey, omitted the beans, and instead added fresh string beans inthe last 2hrs. of cooking. also the dice canned tomatoes i used the ones that had roasted garlic. no dairy at all! - 10/3/07
