Shel's Carrot, Pumpkin,Chick Pea Soup

Ingredients
1 large onion5 large carrots1 can chick peas1 can pumpkin puree1 apple1 tbsp curry pwdr1 tsp cayenne1 tsp garlic pwdr1 tbsp honey (optional)salt & pepper (optional)
Directions
Saute onion in oil until clear, add chopped carrots. Cook for 5-10 mins. Add chick peas, curry & cayenne cook another 5 mins. Add 1 cup stock (chicken would be better-all I had was beef) and chopped apple. Simmer 10 mins.
Puree in batches adding more broth as needed to blend easier.
Add back to pot, mix in pumpkin. Season with salt & pepper if desired. Add 1 tbsp honey (optional).
