3/4 cup sugar3/4 cup brown sugar1/4 cup vegetable oil1 tsp vanilla2 egg whites1 (5 oz) pkg chocolate pudding (not instant)1 (8 oz) pkg sour cream, reduced fat2 cups flour1.5 cups rolled oats1 tsp baking soda1/2 tsp salt1 cup chopped walnuts1 cup mini chocolate chips (semi-sweet)
**Makes approximately 72 cookies
Heat oven to 375 degrees. Place parchment paper on cookie sheets. In large bowl, combine sugar, brown sugar, oil, vanilla, egg whites, pudding mix, and sour cream until moistened. Add flour, rolled oats, baking soda, and salt; mix well until blended. Stir in nuts and mini chocolate chips.
Drop by rounded tablespoonfuls about 2 inches apart onto lined cookie sheets. Bake at 375 degrees for 7-8 minutes or until set. DO NOT OVERBAKE! Cool for 1 minute before removing from cookie sheets.
