White Bean and Tomato Ragu

Ingredients
Chopped onions (1 cup)Chopped Mushrooms (1 cup)1 can Diced Tomatoes1 can Cannelini BeansOlive Oil (2 tbsps)Herbes de Provence (2 tbsps)Garlic (2 cloves)Salt and pepper to taste
Directions
Heat Olive Oil in pot
Add Onion; cook until translucent or soft
Add Mushrooms and cook until brown
Add Garlic
Add Diced Tomatoes and White Beans (rinse beans first)
Add Herbs De Provence, Salt and Pepper
Simmer until desired thickness is achieved (approx. 15-20)
