Cheese scones (easy soda water method)

Ingredients
Directions
1 cup soda water1 cup pouring cream3 cups self-raising flour (or plain flour plus 6 tsp baking powder)3/4 cup grated cheese1/4 cup fresh grated parmesan2 TB chopped fresh herbs - I use a mixture of parsley, rosemary, sage, thyme and oregano.
Sift the flour (and baking power, if using) into a bowl.
Add the cream, cheese (reserving a tablespoon or so), herbs and soda water.
Stir to combine into a dough, adding a little more soda water or flour if required to get a soft dough.
Turn out onto a floured surface, gently pat out to 1 inch thickness and cut into 14 even pieces.
Sprinkle the tops wtih the reserved cheese (or brush with milk if preferred).
Bake 10-12 minutes at 220 degrees celcius.
Makes 14 scones of about 2 inches square once baked.
These are great straight from the oven but also freeze well.
