    3 cups raisin bran
    2 cups buttermilk
    1/2 cup vegetable oil
    1 1/4 cups sugar
    2 large eggs
    2 1/2 cups flour
    1 tsp salt
    1 tsp baking soda dissolved in 1/4 cup of water


Grease muffin pan
preheat oven to 375
Combine first all ingredients in a bowl and mix together
bake for 20 minutes

    I used whole wheat flour and splenda...for an even healthier alternative.I also made 12 regular sized and 24 mini muffins (great for lunches) - 4/18/08

  • I added cinnamon and vanilla, and used almond milk and brown sugar instead of buttermilk and granulated sugar. They're still in the oven, but the batter tasted fantastic. - 6/30/15
