Apple Curry Pork

1 lb boneless pork loin - fat removed - cubed3 tbsp margarine1 small onion - chopped2 apples, peeled, cored and chopped3 tbsp flour1 tbsp curry powder (more or less to suit your taste)1 cup vegetable stock (homemade - no salt)1 cup 1% milk
Preheat oven to 350. Saute apple and onion in the margarine until tender. Add curry powder, saute for about another minute, then add flour and cook for a minute longer.
Add stock and milk, stir well. Pour the sauce into a 9 by 9 baking dish, add the pork, stir gently. Bake for 45 to 50 minutes.
Great served with brown rice cooked in the vegetable stock.
