Vegan Corndogs

Ingredients
1 1/2 C. Whole Wheat Flour1/2 C. Natural Sugar1/2 C. Yellow Corn Meal1 tbsp Baking Powder1 1/4 C. Unsweetened Soy Milk3 tbsp Ground Flax Seed1/3 C. Vegetable Oil3 tbsp Smart Balance Light Buttery Spread6 Smart Dog veggie linksPreheat oven to 350. Grease or paper-line muffin pan (I use a six-muffin pan). Mix in small bowl, 3 tbsp flax seed with equal parts water. Let sit. Combine flour, sugar, corn meal, and baking powder in medium bowl. Combine soy milk, flax seed mixture, vegetable oil, and butter in small bowl; mix well. Add to flour mixture; stir just until blended. Fill the bottom of the muffin cup with batter, then add a soy dog (cut in half, or in pieces). Fill the rest of the cup with batter. Continue until all cups are finished, then bake for 18-20 minutes or until wooden picked inserted in center comes out clean. Cool for 5 minutes. Serve warm.
