Fridge cake for grown ups

Ingredients
100g margarine300g dark chocolate (70% or more)2T agave syrup4T brandy100g dried pare, chopped3t crystalised ginger, chopped300g digestive biscuitsTopping 150g white chocolate30g margarine
Directions
Line an 18cm springform pan with non-stick baking paper.

Crush the digestives.

Melt together margarine, chocolate, syrup and brandy.

Add the biscuits, pear and ginger, stir well.

Press into the prepared pan and smooth the surface.
Allow to cool and set for a couple of hours.

Melt the margarine and white chocolate (very gently). Stir to combine and spread over the cake to cover.

Refrigerate for 2 hours before cutting.

Cut into 24 pieces or 48 little morsels.
