Chicken Parmasan

Ingredients
4 to 5 chicken breasts butterflied in half2 cups Italian seasoned breadcrumbs3 T Parmesan cheese2 tsp granulated garlicsalt and pepper2 eggs beaten (egg wash)1/2 jar of your favorite marinara sauce1 cup grated mozzarella cheese
Directions
Butterfly your chicken breasts in 1/2 (5 breasts will make 10 portions). Salt and pepper each breast. Prepare a dredging station with 2 bowls. In the first bowl beat the 2 eggs with a tablespoon of water. In the second bowl, place about 2 cups of seasoned breadcrumbs, 1 T granulated garlic and 1T Parmesan cheese and mix thoroughly with your fingers. Dredge each breast in the eggs and then coat in the breadcrumbs. Place them on a baking sheet and spray the top with cooking spray (this will help make them crispy) bake at 400 degrees for approx 15 min. After 15 min pull out the pan and top each breast with about 1T of marinara, a sprinkling of Parmesan and 2 T of Mozzarella cheese. Return to the over and bake 5 to 10 min until the cheese is melted and chicken is cooked through (cooking times will depend on the size of your chicken breasts, so please adjust accordingly)
