Roast tomato soup

Ingredients
2 Kg of ripe red tomatos, quartered1 brown onion peeled and sliced2 cloves crushed garlicchili to taste. I use chili flakes sometimespeppersalt 1 teaspoon sugarapprox 3 tablespoons Olive oil1 cup Chicken stock - i used campbells real stock.
Directions
Place all ingredients except stock in large oven proof dish and mix around to coat in olive oil. Cook med heat for about 1 hour or until tomato and onion are very soft. Mush it up and add 1 cup of stock. Return to oven for another 15 mins or so. strain liquid into a bowl, keeping the chunky stuff. Place the chunky stuff in a food processor until all the lumps are gone then return to the liquid and stir. YUMMY! This makes about 4 bowls
