Lentil soup with Italian Seasoning

Ingredients
2 cans of tomatoes, pureed or whole depending on your preference.1 cup red lentils, rinsed well1 box of Kitchen Basics Vegetable Stock1 cup water2 tbs olive oil1 large potato, peeled and cubed16 medium baby carrots, chopped 1 large yellow onion, chopped wellDried Parsley, oregano, sweet basil, black pepper to taste1 bay leaf (remove before serving)
Directions
Makes 8 1 cup servings

In a large stock pot, heat olive oil over medium heat.
Add dried spices, bay leaf and chopped veggies. Saute until veggies slightly tender.
Add tomatoes, stock and water. Mix well.
Add lentils. Mix well and cover.
Bring to a gentle boil, then reduce to simmer.
Let simmer as long as you like. (I did mine for 3 hours, but you can let it go until lentils are to your liking.)
Remove bay leaf before serving or storing.
