Cheesy Zucchini Sticks

Ingredients
1 large zucchini2 tbsp Progresso Italian Bread Crumbs2 tbsp Shredded Parmesan Cheese1 tsp salt1 tsp pepper1 tbsp garlic powdercooking spray
Directions
Cut zucchini into thirds then each third into 8 wedges. Arrange in baking dish (9x12x2). Spray with cooking spray. Season with seasonings. Top with bread crumbs and parmesan cheese.

Bake at 350 deg F for approx 20 minutes or until zucchini is soft

    I dipped the zucchini in egg substitute before rolling in the crumb mixture. I also added a dash of cayenne to the bread crumbs to give it a background kick. I served with some marinara sauce. Delicious and super easy. - 8/15/10

    Instead of bread crumbs you can use crushed up "Fiber One Origional Cereal", tastes great and a little extra fiber never hurt anyone! - 8/31/09

    Yum! I didn't have spray so I took a pastry brush and brushed on olive oil. I eliminated the parmesan cheese and used for my seasonings Mrs. Dash Italian Blend, garlic powder, onion powder, and cayenne pepper. Oh so good and so easy! - 4/2/09
