Ingredients
Frozen Peppers and Onions-entire bagFresh Spinach - 4 cupsOlive Oil 1 tablespoonEgg Beaters 5 1/2 cupsFat Free cheese slice (per serving)
Directions
Sautee onions/peppers in olive oil. When translucent, add fresh spinach to wilt. Fold in Egg Beaters until cooked through to scrambled egg consistency. Melt cheese slice on top in microwave before eating.
