Lentil Soup P90X

Ingredients
1 Tbsp Olive Oil2.5 Large Onions, diced2 Small Carrots, peeled and diced1 Lb Lentils (2 cups) uncooked5 Cup Vegetable Broth, fat free2 Cup Water1 Clove GarlicSalt and Pepper to Taste
Directions
Sautee veggies in olive oil until softened. Add lentils, broth and water and bring to boil. Lower heat, cover and simmer for 30 minutes or until lentils are very soft. Add water if soup becomes too thick. Puree 1/3 of soup mixture. Mix all together. Makes 12 servings
