Butternut Squash, 4 cup, cubes (remove)Olive Oil, 3 tbsp (remove)*asafoetida (hing), 0.125 tsp (remove)Mustard seed, yellow, .5 tsp (remove)Cilantro, raw, 2 tbsp (remove)Granulated Sugar, 1.5 tsp (remove)Salt, .5 tsp (remove)
Heat olive oil on medium. When hot, add hing and mustard seeds. As soon as mustard seeds begin to pop, add squash and brown for 3 min. Add 1/4 cup water to the pan and cover for 10 minutes, until squash is soft. Stir in sugar and salt, toss with cilantro, and serve.
