Abs Diet Chili (modified)

Ingredients
2 cans kidney beans, drained and rinsed1 10-oz can Ro-Tel mild diced tomatoes & green chilies1 lb chicken, diced to bite size1 small onion, finely diced1 red bell pepper, diced1 tsp olive oil1/4 tsp cumin1/4 tsp salt1/8 tsp cayenne1/8 tsp cinnamon
Directions
Heat olive oil over medium to medium-high heat. Add diced onion and bell pepper, saute for about 5 minutes. Add diced chicken. Cook for about 10 more minutes. Add remaining ingredients, turn heat down to allow chili to simmer. Cover and simmer about 20 minutes. Serve over brown rice with a little shredded cheddar cheese if desired.
