Sue's chicken rissoles

Ingredients
180gm cooked chicken meat, minced2 thin slices white bread, crusts cut off, made into bread crumbs1 medium egg beaten1 Tblspn chopped parsley lemon juice - 1 squeeze1 clove garlic crushed (optional)salt and pepper1 tbspn corn oil
Directions
mix the chicken with 1/2 cup breadcrumbs, half the egg and all the other ingredients except the oil. Season with salt and pepper.

Form into 3 patties then dip in left over egg and then the breadcrumbs. Fry in the oil over a medium heat for 5-10 minutes a side until golden brown and heated through.
