Spicy sausage penne w/cream sauce

Ingredients
Whole Wheat Penne 8 oz. Olive OilJennie O Italian Turkey sausage (5 links)Garlic 3 clovesRed Bell pepper (1 medium cut in strips)Sweet onion Medium cut in stripsFresh Broccolli Florets 1 cupCrushed red pepper flakes 1tsp1 Tbsp butter1 can Fat Free evaporated milk1/3 cup Parmesan cheese1 Tbsp Parsley
Directions
Cook the pasta and set aside.
Heat 1 Tbsp olive oil in large stir fry pan.
Add 1 pkg Jennie O Turkey Italian sausage-remove from casings and fry until crumbly.
Add garlic cloves,onion strips, bell pepper strips and broccolli and stir fry.
Add 1 tsp crushed red pepper flakes
Add 2 Tbsp Parsley
Stir fry until Veggies are tender.
Add 1 tbsp Butter (it helps to thinken the sauce)
Add Can of Fat free evaporated Milk
Add 1/3 C of Parmesan cheese
Cook until it reduces down and thickens a bit.
Add it 1/2 lb of cooked whole wheat pasta (penne or rotini)
Makes 6 servings
Serve with a sprinkle of parmesan on top.

    Really great dish! I did make a few changes to suit our taste buds but they were minor! I used light smoked sausage and instead of crushed red pepper I used cajun seasoning to taste. I also added just a touch of water/cornstarch mix to thicken a tad. Simply delish! - 4/17/11
