1 recipe Coconut Flour Quiche crust5 eggs1 cup heavy cream4 oz crumbled goat cheese1/2 cup sundried tomatoes, chopped1/2 lb jumbo lump crabmeat
1. Preheat oven to 350 degrees. Adjust oven rack to middle position. Blend together the eggs, cream, ant herb if using, pepper and salt.
2.Sprinkle half the goat cheese, crab meat and sun-dried tomato mixture over uncooked pie shell. Pour half the egg mixture & layer again the same way. Place the pie in the oven. Carefully pour egg mixture into pie shell.
3.Bake until the top of the quiche is lightly browned and a knife inserted about 1 inch deep comes out clean, 40-50 minutes. The center should be set, but soft like gelatin. Transfer the quiche to a baking rack to cool. Serve warm or at room temperature..
