Creamy Slow Cooker Pumpkin Oatmeal

Ingredients
2 cups steel cut oats1 12 oz. can fat-free evaporated milk1- 15 oz. can pumpkin (not the pie filling)6-8 cups water½ cup brown sugar (or use Splenda or maple syrup or whatever you like)1 tsp vanilla1teaspoon salt2 teaspoons pumpkin pie spice or make your own ( 1 tsp cinnamon, ½ tsp ginger, ¼ tsp cloves , ¼ tsp nutmeg)
Directions
Just put it all in the crock pot, mix until no chunks of pumpkin left. Cook on low for 8 hours (while you sleep). Yummy breakfast for the entire week.

    Made this over night last night, and had it for breakfast this morning. It was very good and filling. I know it serves 8, and I couldn't put 8 portions together this morning, so I did a 1/4 cup serving. Is that the right serving??? seems like it might be more because it made so much . . . - 10/14/14

    Made this last night to eat this morning. Texture and consistency were perfect. However the flavor was a little bland. Could have used more pumpkin and a bit more sugar. I just added some sweetener at the table. I didn't have any evaporated milk in the house, so I made my own from dry milk. - 10/18/11
