5 small or 4 medium eggs260 grams gluten free flour mix250 ml milk 2%300 ml water25 grams olive oil5 tsp sugardash of salt
Beat eggs lightly with sugar and salt. Add half of flour. Stir well. Now add milk and while stiring, add rest of the flour. Pour in water and oil. Stir or whip lightly with a whisk. Leave batter in a fridge for at least half an hour or up to an hour (flour needs to dilate). Heat up pancake pan and grease it lightly. Ladle batter on a pan, fry on one side for about half a minute and then on the other side for 20-30 seconds.
