Falafel Patties

Ingredients
900g Chickpeas (about 4 cups) or two 5 oz. cans drained1 cup wheat germ, natural rawOnions, raw, 1 medium (2-1/2" dia)Salt, 1 tsp Parsley, 1 cup Cumin, 1 tspCorriander Powder, 1 tspCayenne Pepper, scant 1/8 tspBaking Powder, .5 tsp Garlic, 4 clove 2 Tablespoons Olive Oil for frying all 12 servings (may use 1/2 of the Falafel mix and store remainder for another day)
Directions
Wash and drain the chick peas well. Chop the onion fine, and wash and chop the parsley into small pieces.

Put the chickpeas and onion in a food processor, grind up, add the minced garlic, wheat gern, all spices, and parsley.

Store in a container until ready to fry.

Put 1 tablespoon of Olive Oil in a large non stick pan for every 6 falafel patties you make. Heat the oil over medium heat (covered) until hot.

Using a 1/4 cup measuring cup, scoop the falafel mix and place into the hot oil leaving room for 6 patties overall, and press down gently with a non-stick spatula. Continue with 5 more falafel patties. Fry until golden brown underneath (about 5 to 6 minutes) and gently turn over, press, and cook other side (3 to 4 minutes more).

Serve in your favorite pita bread with Cucumber Yogurt Tahini Sauce, or over a Fattoush Salad (see recipe book).
