1 Tbsp. Extra Light Olive Oil1 medium onion, chopped1 medium green pepper, chopped2 lbs lean ground beef2 Tbsp chili powder1/2 tsp ground cumin1/2 tsp salt1 can red kidney beans, drained and rinsed1 can northern white beans, drained and rinsed1 small can green chilies, diced1 1/2 cups water (to make the chili more liquidy)2 cans diced tomatoes1 jar (10 oz) Francesco Rinaldi Garden vegetable pasta sauceoptional - 1 cup shredded cheddar cheese
makes 14-15 1 cup servings
using the olive oil take the onion and green peppers and cook until softened. Add the meat and cook until brown. Drain meat and add to a large cooking pot. Mix rest of ingredients but cheese in and cook until beans are soft and the rest is heated through. Serve with cheese or without. Great for one pot meal for a week for 2 people. I would think it would freeze well.
