Chickpea Butter Chicken

Ingredients
6 chicken drumsticks, microwaved, skin removed and deboned2 tbsp olive oil1 whole onion, diced1 heaped teaspoon minced garlic1 can tomatoes in juice3 tsp indian spice mix25 gm ground almonds165 ml coconut milk1 can chickpeas, drained and rinsed
Directions
Sautee onion and garlic in oil, add tomatoes, almonds, spice, chickpeas and water. Simmer 10 or so minutes. Add chicken and coconut milk and simmer 5 - 10 minutes. Season to taste. If too thin thicken with a little cornflour and water. Makes 6 1-cup serves.
Serve with rice.

NB The spice I use is MDH Butter Chicken Masala from Moshims in New Plymouth.
I puree the chickpeas before adding - what the kids do not see, they love!
