Carrot Kugel

Ingredients
1/2 cup canola oil1 c. brown sugar2 med. eggs5 med. carrots cooked and mashedor 3 large or 6 small jars of baby strained carrots1/2 tsp. lemon juice1 tsp. vanilla extract1/2 tsp. salt1 tsp. baking powder1 c. flour
Directions
Peel, cook and mash carrots. Beat oil and brown sugar together until smooth. Beat in eggs, lemon juice and vanilla extract. In a separate bowl, mix together flour, salt and baking powder. Add to egg mixture and then add mashed carrot. Blend well. Pour into an ungreased 9 x 9 inch pan and bake at 350 F. for 40-45 min. Makes 16 2 x 2 inch. servings.
