Tuna Tartare with Mango and Avacado

8 oz. of high quality tuna1 avocado1 mango - be sure it is ripe3tb chopped fresh cilantro3-4 tb fresh squeezed lime juice2 cloves garlic chopped1/4 - 1/2 cup macadamia nuts - lightly crushed and then toasted1/2 cup balsamic vinegar1/2 tsp kosher salt
Put vinegar in small pot and reduce it until it will coat a spoon and reserve.
Trim the tuna of any skin, blood spots and sinew. Cut it into a 1/8" cube and then toss the tuna in olive oil.
Peel and remove the pit from the mango and roughly chop the fruit.
Peel and remove the pit from the avocado and roughly chop. Add the chopped cilantro, lime juice, garlic, and salt.
To serve I use a square form, Put the tuna in the mold first and fill it up to about half way. Add the mango and compress. Top it off with the Avocado mixture. Drizzle the balsamic reduction on the plate and sprinkle with the macadamia nuts.
