Quick Caribbean Style Rice and Beans

Ingredients
1 Package of Uncle Ben's Ready Rice (Whole Grain Brown)1/4 Cup of Coconut milk ( watch the brand could increase calories).1 Can of Kidney Beans (Dark or Light)1tsp Ginger Root1tsp Fresh Thyme
Directions
Empty Kidney Beans in pot
And 1/2 cup of water, Ginger Root, Thyme, and Coconut Milk.
Cook on low heat until beans begin to split. (approx.30 Min)
Add Rice and simmer until rice is hot. (appox 7 min.)

Makes 6 Servings of 4 oz each.
