1 Tbsp olive oil2 Tbsp minced garlic56 oz chicken broth3 15.5 oz cans of white beans1 6 oz can of tomatoe paste1 28 oz can of diced tomatoes2 boneless, skinless chicken breasts- about 22 oz2 large onions1 4 oz can of green chiles1 4 oz. can of diced jalapeno peppers1 Tbsp of ground cumin1 Tbsp of ground cayenne pepper1 Tbsp of chili powder3 Tbsp of corn starch for thickeningMakes about 6 quarts, or 24 cups
Cut chicken in small pieces and stir-fry with garlic in olive oil. About 5 minutes.
Dice onion, measure all other ingredients (sans corn starch) and combine with cooked chicken in Crock Pot..
In a small bowl add 1 Tbsp cornstarch with some liquid from Crock Pot and whisk. Add back to Crock Pot. Repeat two more times.
Cook about three hours to allow flavors to meld. Serve with dollop of sour cream or nonfat plain Greek yogurt.
