Chickpea-Tomato Curry

- 1 can drained & rinsed chickpeas (1.75 cups)- 2 c diced tomatoes (with liquid)- 1/2 c diced onion- 1 c baby spinach- 1 c cauliflower- 1/2 tbsp olive oil- 1 clove garlic- 1/4 tsp ground ginger- 3/4 tsp cumin- 1/4 tsp salt- 1/2 tsp sugar- 1 tsp turmeric- 1/2 tsp chili powder- 3/4 tsp cayenne
Heat oil in skillet. Sautee onions for a few minutes until tender. Add ginger, garlic, cumin, cayenne, tuemeric, chili powder, and slat (all the spices except sugar). Sautee 2 minutes. Add tomatoes and sugar. Simmer 5 minutes. Add chickpeas and spinach. Simmer 5-10 minutes.
Serve over rice. Makes 4 servings.
