crustless Spinach and Ham Quiche

Ingredients
1 cup chopped onion1 cup sliced fresh mushrooms1 tbsp. olive oil1 package (10 ounces) frozen chopped spinach, thawed2/3 cup finely chopped fully cooked ham5 eggs2.5 cups shredded Muenster or Monterey Jack cheeseSalt and pepper to taste.
Directions
In large skillet, saute onion and mushroom in oil until tender. Add spinach and ham. Cook and stir till the excess moisture is evaporated. Cool slightly. Beat eggs and add cheese and mix well. Stir in spinach, onion and ham mixture and blend well. Spread evenly into a greased 9 inch pie plate or quiche dish. Bake at 350 degrees for 40 to 45 min. or till a knife inserted near the center comes out clean. Yields 8 to 9 servings.
