Lemon & Dill Grilled Salmon

2 4oz fresh salmon filets, skin removed1 tbsp Brummel & Brown original spread, meltedJuice and grated peel of one large lemon2 tbsp white wine1 tsp extra virgin olive oil3 cloves garlic, minced1 tbsp minced shallot1 tbsp fresh dill weed, mincedDash of red pepper flakesFresh ground sea salt and black pepper
1. In a small mixing bowl, whisk together melted spread, lemon juice and peel, white wine, olive oil, minced shallots, minced garlic, fresh dill, and red pepper flakes. Season with salt and pepper. Pour over salmon filets in plastic bag and seal. Marinade in fridge for two hours, flipping occasionally.
2. Wrap individual filets in tin foil and place on hot grill. Grill for fifteen minutes, flipping occasionally. Serve immediately. For stronger flavoring, cook filets with marinade in foil packet.
