Rainy Autumn Day Comfort Soup

Ingredients
6 Cups Chicken Broth3 Cups Water3 Cubes Beef Bouillon3 Carrots (Sliced)4 Celery Stalks (Sliced)8oz Fresh Mushrooms (Sliced)1/4 c. Scallions (chopped)4 small potatoes (cubed)4 bay leavesdash garlic powderdash black pepperdash seasoned saltdash chopped red pepper (if you like it spicy)
Directions
Start by putting the broth, water, and bouillon cubes into a stock pot and start getting it to boil. Slice or chop all of the vegetables and put them in the boiling liquid. Add the seasonings and let it boil for 30 minutes or until all the vegetables are tender.

This is a great low cal comfort food. This makes about 9 large bowls of soup. It is low calorie and low fat, but if you need a low sodium diet, this isn't for you. However, if you substituted low sodium broth and bouillon you should be fine.
