Cheesy Creamy Rice

1 c. rice3 c. water2 tsp. margarine1 tsp. salt1/3 c. milk2 tsp. margarine2 oz. velveeta, cubed1 T. light mayonnaise
Place first 4 ingredients in a medium sauce pan and bring to a boil. Reduce heat and simmer for 20 minutes. Put remaining ingredients in a microwave safe container and microwave until melted and combined, stirring occasionally (be sure to cover this, it will explode all over the microwave). Add cheese mixture to cooked rice in pot. Stir to combine. Makes 4 servings.
