Whole Wheat Impossible Pumpkin Pie

Ingredients
1-1/2 cup skim milk2 pkts unflavored gelatin1 tbsp cornstarch1 tsp vanilla2 cups pumpkin puree1/2 cup whole wheat flour1 tsp baking powder1/3 cup sugar1 tsp ginger2 tsp cinnamon1/2 tsp salt
Directions
Preheat oven to 350°F.

Soften gelatin in 6 tbs cold water. Mix All ingredients in a mixer on high. Mix really well.

Pour into a deep-dish pie pan and bake for 60 minutes.

Remove from the oven and allow to cool.

Makes 8 slices of pie.
