Extra Jumbo Shrimp stuffed with lump crab

8-12 Extra Jumbo Tiger Shrimp raw (Deveined, butterfly)1 cup of progresso italian style bread crumps (you can make your own low calorie bread crumps)1 egg2 teaspoons of mustardsprinkle of dry mustard2-3 teaspoons of light or fat free mayoold bay seasoningcrushed red peppersblack pepperseasoning salt (optional)Lemon juicelow calorie, low sodium ritz crackers (crushed)
Shrimp:
Clean, remove shell, devein and butterfly the shrimp.
Leave the tail on is optional.
Place in a buttered or pam sprayed pan.
drizzle with lemon juice, old bay
leave open
Crab Stuffing:
Mix together all ingredients except crab meat and ritz crackers
Toss in lump crab meat carefully not breaking up the lumps
Stuff shrimp closing the shrimp around the stuffing
Top with crushed ritz crackers
Bake in the oven uncovered for 20 minutes.
