Low Fat Giblet Gravy

1 cup pan drippings (best flavor), fat removed, or stock or broth3 cups water1/2 c flour4 T McCormick Poultry gravy mix1 c poultry giblets, cooked & chopped finely (neck meat, gizzard & heart, no liver!)salt & pepper to tastesometimes I add a little crushed sage
Makes 20 - 1/4 c servings
Pour pan drippings (for best flavor), fat removed, or stock and water into saucepan and bring just to boil.
Mix flour and gravy mix with a small amount of COLD water (I usually shake in a small jar to mix) before adding to saucepan.
Wisk until blended and thick.
Reduce heat and add giblet meat, finely chopped. Add salt, pepper and sage, if using, to taste
