Haddock and Spinach in Spicy Tomato Sauce

2 tablespoons extra-virgin olive oil1 14.5 oz diced Italian-seasoned tomatoes 3/4 cups and 1/4 tablespoons chicken broth 1/2 teaspoons red-pepper flakespinch of salt2 pounds haddock fillets (or any white fish)9 oz. bag of spinach leaves
makes 4 servings
In a large skillet, heat the oil, add the tomatoes (with juice), broth, pepper, and salt. Bring to a boil. Reduce the heat to a brisk simmer. Cook for 8minutes, or until the mixture thickens. Place the fish in the pan. Press lightly to submerge it in the sauce. Cover and cook for about 8-10 minutes, or until the fish flakes easily. Remove the fish to pasta bowls. Add the spinach to the skillet. Increase the heat to high. Cook, stirring occasionally, for 2 minutes, or until the spinach is wilted. Spoon over the reserved fish.
