Chicken with Feta Cheese Sauce

Ingredients
6 6 oz boneless, skinless Chicken Breast1 Tbsp Butter4 tsp all purpose flour1 can evaporated skim milk1 Tbsp Fresh or dried Chives3/4 cup crumbled Feta Cheese
Directions
Brown chicken breasts in non stick spray over medium heat (aprox 8 minutes on each side). Keep warm. Melt butter in sauce pan over medium heat. Add flour, cook 1 minute stirring constantly with a whisk. Gradually add milk stirring constantly. Add chives. Reduce heat to med-low and simmer 3 minutes, or until thick. Add cheese, and stir until cheese melts. Spoon over chicken.

    This was really good! When I see feta, I think Greek, so I added a little Greek seasoning.

    I think dill would be a nice addition too if you didn't want to go with Greek flavours... Good idea! :-) - 1/29/11
