Crock Pot Chicken Cacciatore

6 lbs. chicken breast, boneless and skinless2- 14.5 oz.cans tomato sauce, low sodium1.5 cups red bell pepper, chopped1 med. sweet onions, chopped16 oz. sliced fresh mushrooms2- 14.5 oz. cans diced tomatoes, low sodium2 T. dried parsley2 T. dried basil1 T. dried oregano1 T. Splenda granulated
Makes 18 - 1 cup servings.
Cook on low heat. 10-12 hours.
pour a thin layer of tomato sauce in the bottom of the crock pot, then arrange chicken in a single layer. I cut my chicken breasts into 3 chunks each. Makes it easier to set out portions. Place onion and peppers and mushrooms over the chicken. Mix remaining sauce and diced tomatoes with spices and water in a bowl and pour evenly over the top of everything, covering well.
When done, break up the chicken into pieces with a spatula and mix well.
