Stuffed Pork Chops

Ingredients
6 Pork Chops (Cut a Pocket for stuffing)2 pkg Jiffy Cornbread Mix1/2 Onion1 Bell Pepper1 cup fresh Mushrooms1 TBSP real Butter (or Olive Oil)Cajun Seasoning (Tony's Chacheres)2 C. Pork Gravy
Directions
Prepare cornbread mix following directions on box. Sautee' onions, peppers, and mushrooms in butter (olive oil). Mix sautee'd veggies into cornbread mix. cook in cake or casserole pan as directed on box.
Prepare chops while bread is cooking. Cut a pocket into each chop. Put seasoning into ziplock bag and toss each chop inside the bag to cover with seasoning (shake-n-bake tecnique).
When cornbread is ready, crumble it into a mixing bowl. Line chops standing up in cake or casserole dish. Spoon cornbread into each pocket until full. Use any extra stuffing to fill the dish around the chops. Cover with aluminumn foil and bake at 400' for 45-60 minutes.
Mix gravy for serving.
