Lizzie's Scalloped Sweet Potatoes

Ingredients
24 ounces cut sweet potatoes (recomment Ore Ida Steam and Mash)1 medium onion, cut into thin petals1 teaspon thyme, divided 1/2 teaspoon freshly ground black pepper1 cup skim milk2/3 cup low fat sharp cheddar cheese, divided
Directions
Preheat oven to 350. Spray 2 quart baking dish with cooling spray (butter flavor recommended). Layer 1/2 of the sweet potatoes in the pan. Sprinkle with 1/2 teaspoon thyme. Layer 1/3 cup of the shredded cheese over the potatoes. Layer the onion petals over the cheese. Layer the rest of the sweet potatoes. Sprinkle the the rest of the thyme over the potatoes. Pour the milk over the casserole. Sprinkle the remaining cheese over the top. Cover and bake for 40 minutes. Makes 6 servings.
