Oat crepes

Ingredients
4 medium eggs125 grams oat flour250 ml milk 2.5%250 ml water20 grams olive oil20 grams fructosepinch of salt
Directions
Makes about 14 crepes.
Whip eggs slightly with fructose and salt. Add half of flour and oil, stir well. Now pour in milk and water and add rest of flour while stiring.
Leave batter in fridge for at least 30mins (up to 60). Before making each pancake, stir batter well. Heat up pan and cook on one side for about half a minute and on the other side about 20 seconds.
