Southern Style Low-Carb Pork Chops

Ingredients
2 large pork chops (12 ounces)3 Tbsp. vegetable oil2 Tbsp. soy flour2 Tbsp. whole wheat flour2 Tbsp. almond flourSalt, pepper, onion powder, paprika1 Tbsp. heavy whipping cream
Directions
Trim all fat from boneless center-cut pork chops, about 3/4 inches thick. Combine flours in small bowl. Sprinkle chops with spices. Heat oil in black cast-iron skillet until smoking. Place chops in skillet and cook, turning once, until golden brown. Remove to platter. Sprinkle flour into hot oil to make roux and cook, stirring with fork, until light brown. Add water to roux and stir until thickened and then place chops back in skillet. Turn to coat and turn heat down to med. low. Cover and cook chops until tender. Cut chops into four portions and top with gravy.

    I have issues with the roux: 1) heavy cream thickens by itself when heated so I don't really see the point, unless it's to increase the volume. A quarter cup of broth would work for that. As it was, the gravy was too thick and I couldn't get it smooth. - 10/29/13
