Coconut Pineapple Chicken

Ingredients
6 chicken breasts1 6oz can pineapple juice1/2 can coconut milk1/2 t. gingersplash soy saucesesame seeds (optional)
Directions
combine all ingredients, marinate overnight.
Bake at 350 for one hour, covered with a foil tent to seal in moisture.
Makes six servings (one breast=one serving).
Serving suggestion: brown rice or couscous and pineapple tidbits with stir-fry veggies.
Can also be grilled, or cut chicken into cubes prior to marinating for skewers.
