20 Minute Skillet "Lasagna"

1 12 oz bag Boca Crumbles 1/2 small onion, diced1 Tbsp olive oil4 tsp minced garlic1 tbsp oregano1 small can diced or stewed tomatoes, no salt added1 cup tomato sauce8 oz shredded mozzarella cheese, part skim milk1 13.25 oz box whole wheat pasta
1. Put on a large pot of water for the pasta. Bring to a boil. Cook pasta according to directions (12-15 minutes)
2. While water is boiling, add garlic, onion, and Boca crumbles to a large sauce pan. Cook for about 5 minutes over medium heat or until crumbles and onion are cooked through.
3. Add oregano, tomatoes, and tomato sauce to the sauce pan. Continue to cook over medium-low heat, stirring often, while pasta cooks.
4. Drain pasta. Combine pasta, sauce mixture, and shredded cheese together. Stir well.
Add salt and pepper to taste (not in nutrition count)
Makes approximately 8 good size servings (About 1.5 cups).
