Vegetable Soup (Party Like a Vegan)

1 carton low sodium vegetable broth3 cups water1 small onion, choppedA small bunch of dill2-3 small turnips peeled and cut into chunks (my turnips were very small, like the size of a small onion.)3 carrots, peeled and cut into chunks3 parsnips, peeled and cut3-4 stalks of celery, washed and cut in to large pieces¾ of an 8 oz can of chopped tomatoes1 pinch fresh grated ginger2 Tbls shoyu2 cups broccoli florets3 large kale leaves, chopped (about 1 cup)
1. Mix broth and water in large pot, bring to a slow boil. Add onion and dill. Let simmer 5 minutes.
2. Add turnips, carrots, parsnips, celery, and tomatoes. Bring to boil again.
3. Add ginger and shoyu. Let boil until soft, about 10 minutes, depending on size.
4. Add broccoli and kale, mix well and cover. Turn heat down to a low simmer.
5. Serve with cooked pasta.
