Ingredients
12oz pork loin centre cut or any cut of pork that is lower in fat and boneless1/2 c onions1 heaping tbsp Dijon mustard (I use whole seed but you can really use whatever Dijon mustard you like)garlic cloves (I use about 2 but you can use how ever much you like!)1tbsp granulated sugar2 med sized red apples (you own preference is just fine but I use Honey Crisp or Pink Lady apples)
Directions
1. cut pork chops into med bite sized pieces
2. brown in Teflon or any non-stick pan
3. once cooked, remove pork chops from pan and set aside
4. in same pan as you cooked the pork add onions, garlic, Dijon, sugar and cook until onions golden brown and apples are soft - if sauce is looking a little dry just add a little water, apple juice or apple sauce until it's more saucy)
5. return the pork chops and simmer until all flavors are mixed thoroughly

you can serve it with rice, potatoes or just on it's own!
makes 4 - 1 cup servings
great for leftovers!!
side note: the cooking time area wouldn't let me put 30-40 minutes but that's really more of an accurate time than just 30 minutes. it just depends on how long the pork takes to cook. enjoy!!
