Lasagna

Ingredients
1/2 lb lasagna noodles (6-7)1 lb lean ground beef1 med. onion, chopped2 cloves garlic, chopped1 6oz can tomato paste1 8oz can tomato sauce1 tsp each: rosemary, oregano, sweet basilSalt and Pepper to taste3 eggs slightly beaten15 oz of low fat ricotta cheese1/2 cup grated parmesan cheese2 cups grated mozzarella cheese2 tbsp dried parsley
Directions
Cook lasagna according to package in boiling water to which 1 tbsp of oil has been added. Drain, rinse with cold water, Seperate noodles and spread out on towel to dry.

Saute beef, onion, garlic until the meat is brown, stirring with fork to separate meat into bits. Add tomatoes, tomato paste, tomato sauce, seasonings, salt and pepper. Bring to a boil, then simmer very gently for 1 hour. Stir occasionally.

Mix riccotta cheese, eggs, parmesan cheese, parsley, salt and pepper to taste.

Arrange 1/2 of lasagna over bottom of greased 13x9x2 baking dish. Cover with 1/2 of cheese mixture, 1/2 of mozzarella cheese, and 1/2 of meat sauce. Repeat layers. Sprinkle more parmesan cheese over the top.

Bake at 350 degrees for 45 minutes to 1 hour.
